The knives I make are primarily carbon steel, which means that if they are not properly maintained, they will rust.
Maintenance of a carbon steel knife:
Hand wash, definitely no dishwasher! Do not let it soak in water.
You should wipe it well after each use and putolive oil on the blade. Olive oil protects the blade from oxidation.
Once oiled, store the knife in a dry place, in the open air in the kitchen or living room for example.
